| Hi guys! It’s Jess here with today’s Wellness Wednesday feature. You may have gotten to know about me a bit last week as the new team member here at MOT. This week, another fun fact I’ll share is that I’m also gluten free. So, today is all about GF eating and how it can be delicious, nutritious, and so great for reducing inflammation in the body! ✨ Benefits of Going Gluten-Free: Reduced inflammation 🧘♀️Improved digestion and nutrient absorption 🌱Clearer skin and more energy 🌞Mental clarity and better focus 🧠Improved sleep 🥱Decreased joint and muscle pain💪 When I first went GF, I thought I’d miss all my favorite foods. As it turns out, that’s absolutely not the case! Now, if you’re wondering what GF eating actually looks like in real life, let me show you one of my favorite easy recipes that is total comfort food at it’s best! Spaghetti and Meatballs: (makes approx. 15 meatballs) -2 lbs 85% lean ground turkey -2 large eggs -4-6 Tbs skim milk -5 cloves minced garlic- 1 large or 2 medium minced shallots -1 cup GF bread crumbs (I like Aleia’s Italian Bread Crumbs; found at Fry’s) -2 medium dollops of low fat plain Greek yogurt -2/3 cup of grated parmigiano reggiano cheese -4-5 Tbs extra virgin olive oil-approx. 4 cups of your own homemade marinara sauce or a 28-32 oz jar of store bought sauce to save time (I like Rao’s Roasted Garlic sauce) -salt, ground black pepper, oregano to taste Place all ingredients in a large bowl (except olive oil and sauce), and mix until uniformly combined. Roll into balls a little larger than that of a golf ball, approx. 2.5″ in size, and use olive oil to lightly brown on all sides on medium heat. Then, add the sauce and continue cooking the meatballs through for another 15-20 minutes on medium heat just allowing a gentle simmer to avoid breakage. Pair with your favorite GF spaghetti or pasta! I really love Jovial thin spaghetti or penne made from brown rice served up al-dente! Feel free to top with more cheese and/or fresh basil. |
